What you need (for approx. 2 persons):
- 14 oz chicken breast fillet
- 1 ripe mango
- 2 shallots
- 7 oz lentils (if possible, half black and half red lentils)
- Olive oil
- A splash of white wine
- Chicken broth
- Curry powder
- 3–4 tbsp crème fraîche
- Salt and pepper
- Garam Masala (or alternatively, a pinch of the following spices: ginger, coriander, cinnamon, bay leaf, clove, cumin, nutmeg, cardamom)
- Skewers – we recommend our SKOTTI PIKES, of course
Preparation – Here's what you do:
- Cut the chicken breast and peeled mango into approximately 0.8 in cubes each, then alternate threading the meat and mango onto the skewers.
- Prepare the lentil mixture in a pan before grilling. Finely chop the shallots and sauté them in a pot. Then add the lentils and sauté them as well. Deglaze with white wine and fill with chicken broth until everything is covered. Add Garam Masala or the individual spices. Cook the lentils while stirring constantly until they are slightly al dente, adding chicken broth if necessary.
- Now, season the chicken skewers with salt and pepper, and grill them on both sides over direct heat for at least 4 minutes.
- Finally, dust the lentils with some curry powder and fold in the crème fraîche.
- Arrange the skewers on the curry lentils and enjoy.
In addition to the lentils, a salad or rice goes great as a side dish with these delicious skewers! Or next time, you could make marinated chicken skewers right away – a true delight for the palate!
